After years of planning his food truck concept, owner Brian Moore soft-opened the food truck on Tuesday, July 23. He officially opened the truck for business on July 24, 2024.
“I’m super excited, nervous, and scared all at the same time,” Moore said.

Moore’s career spans 15 years in the culinary field, including training at Le Cordon Bleu and experience as a fine dining chef in downtown Portland. He also ran two successful restaurants in Oregon City before taking a five-year hiatus due to a medical emergency.
Now feeling refreshed and recovered, he said he’s ready to get back to doing what he loves.
“I missed it,” he said, “doing what I love—which is feeding people my yummy food.”
That’s a Wrap’s menu spans a variety of flavor profiles and is flexible to fit dietary needs and restrictions, Moore said. Breakfast wraps all have some sort of potato product, as well as an egg to blend with a combination of sweet and savory ingredients. The lunch wraps vary widely with ingredient builds, from a hummus-based veggie wrap (The Nutty Professor) to a Hawaiian-inspired wrap (The Maui Waui). All wraps are currently priced at $13.50.

“I love to make everything on the menu, but I have a feeling that The Chunk and The One Eyed Willy are gonna be the most popular due to it being brisket,” Moore said.
The truck will be open seven days a week from 8 a.m. to 5 p.m. for the next two weeks, Moore said. He wants to see the busy and slow times, so he can determine the days he can take off in the future.
Once his feet are set and the business is humming, Moore said he intends to support the community as much as possible, including food drives, sponsorships, and donations.
That’s a Wrap is currently open seven days a week at The Bite of Newberg from 8 a.m. to 5 p.m. with walk-up, call ahead, and soon online ordering via DoorDash and Clover. However, Moore said he’s only open seven days a week to determine which times are slowest so he can plan time off accordingly.
