The quaint drive-thru coffee stand situated at the corner of E 1st Street and N Everest Road in Newberg, formerly known as Cowboy Coffee at The Coffee Barn, has undergone a transformation.

Ownership and operations shifted hands last week, ushering in a new era for the establishment of Greenhouse Coffee Co.

Taking over on May 1, 2024, Greenhouse Coffee Co. is helmed by Nicole Young, who previously served as a barista and manager at Cowboy Coffee at The Coffee Barn since 2020.

“I always knew I wanted to work for myself,” said Young. “I always had that mindset. When the Coffee Barn owners said they were interested in selling the Newberg location, we started talking.”

Expressing her long-held entrepreneurial aspirations, Young, a Newberg native and graduate of Newberg High School, is eager to integrate herself further into the local community.

“Nicole is truly a Newberg local—she has a lot of stake there,” said Cowboy Coffee at the Coffee Barn co-owner Drew Delbridge. “I think that’s actually very important and something we didn’t have. She’ll do great.”

Young joined the previous owner’s team in March 2020, which Young says was a difficult time to start working a new job, but especially a job in the service industry.

“I had three days of training, and then we were closed for two weeks,” Young said. “Then I was working open-to-closes by myself. It was tough but it was a really great way to learn the whole business.”

Drew, along with his brother Ty Delbridge, acquired the Newberg location in July 2020, expanding their operations from Molalla, Ore.

Recognizing Young’s capabilities and dedication, the Delbridge brothers gradually entrusted her with more responsibilities. Following Drew’s decision to prioritize family commitments in 2023, they initiated discussions about selling the Newberg location, with a preference for offering it to the existing staff.

“Nicole showed us that she can run someone else’s shop,” Drew said. “When we asked in Nicole would be interested in running it, she came to the table with her idea and game plan ready. We didn’t want the shop to close down, so this was a great option.”

Young aims to maintain familiarity for regular patrons while implementing several updates to the menu. The shop will continue to serve coffee from Vancouver, Wash.’s BJ’s Coffee Roasters, while introducing new offerings like non-dairy milk, gluten-free pastries, organic smoothies, ice cream, and milkshakes. Additionally, noticeable changes to the exterior include a new color scheme—transitioning from red to white with a green roof—alongside plans for floral embellishments and exterior planter boxes, aligning with the greenhouse theme.

“I’m excited to see what this new experience brings me,” she said. “I’m young, and sometimes it feels like I don’t know what I’m doing. But I’ve learned a lot over the years and there is a great community surrounding me. Anything else, I’ll just learn as I go.”
