Kaytlin “Kayt” Ebora’s pandemic project is soon to become her full-time business when she opens Kayt’s Kitchen, a bright pink and white food truck, on April 22 outside of Pulp & Circumstance on College Street in Newberg.
“We’re really excited to be in this community and serving it at a new level,” Ebora said. “I’ve always known that I’ll stay here … Now as an adult, it feels great to be a part of the resurgence bringing life and vibrancy to downtown.”

A Newberg native, Ebora worked for Dutch Bros. for about eight years. She was managing a location near Portland International Airport (PDX) in 2020 when the pandemic lockdown hit.
“We were home on a two-week quarantine, and I started making bagels,” she said. “I realized I hated my job. For some reason, it took that moment to realize I had to change something.”
She then applied for a position at Carlton Bakery, where she baked and ran the front-of-house operations. During her tenure, she honed her baking skills and learned the ins and outs of the business of baking.

Ebora is not brand new to the Newberg bakery scene. She has been selling baked goods since October 2020, offering a “porch pickup-style” of baked goods delivery. In May 2021, she started selling at the Newberg Wednesday Market and various pop-up events.
“[The Newberg Downtown Coalition] is thrilled to welcome Kay’s Kitchen to the downtown business community,” said Newberg Downtown Coalition Executive Director Aubrey Nichols. “Kayt has been a constant presence at Wednesday Markets, and her treats truly brighten anyone’s day.”
Newberg’s downtown area specifically has few breakfast options for locals. According to Yelp, there are 9 locations downtown (between Harrison St. and Villa Street on E. Hancock and E 1st St.) that are tagged as breakfast locations.
Of those, two are coffee shops that are currently closed that served light breakfast options (See See Motor Coffee Co. is out for good, and the Coffee Cottage — now Lyrics Cafe — will be reopening soon). Others listed are Ruddick/Wood and the Newbergundian Bistro, both open for weekend brunch. Rudy’s Brunch parked on 99W is open Monday – Saturday. Then there’s Luckee Dutch Bakery for baked goods and J’s Restaurant and Lounge for a classic diner menu.
“We know Kayt’s Kitchen will be an incredible addition to the downtown food scene, specifically filling that much-needed breakfast space.” Nichols added.
Kayt’s Kitchen will offer several options, from sweet to savory:
- There are 8+ bagel varieties (the same ones she learned to make during the pandemic) that will be sold daily, accompanied by a variety of spreads and schmears.
- Muffins
- Scones
- Macarons
- Cookies
- Cinnamon Rolls
- Pop Tarts (Her most requested item — “The one I get asked about the most is our raspberry rose,” Ebora said. “People love those, and they always sell out.”)

“We are super excited to watch her business grow, but I’m selfishly excited to just have such good access to her food and treats with her being next door,” said Kady Fugere, Manager at Pulp & Circumstance. “Kayt’s pop ups at our shop in the past have always brought more new faces into our shop so we are excited to have our customer bases overlap.”
Ebora is also creating a monthly “Pastry with a Purpose” that will change flavors based on the season and the sales of which will benefit a local nonprofit.

To celebrate her first day of business, Ebroa is throwing a Grand Opening at her new food truck’s home on the gravel lot between the Blue Trout Gallery and Pulp & Circumstance on April 22 from 12 p.m. to 5 p.m. There there will be music, free mini treats, coupons, stickers, and a give away. Pulp & Circumstance is also hosting a winery pop up tasting with Balanza Vineyard at the same time.
“We are thrilled to welcome Kayt’s Kitchen as our new neighbor,” said Pulp & Circumstance owner Jennifer Sitter. “Kayt’s passion and hard work for her craft is apparent in everything she does and we are excited to watch her business thrive.”
After the grand opening on April 22, Kayt’s Kitchen will be open Friday through Sunday from 8 a.m. to 2 p.m. as well as her continued presence at the Newberg Wednesday Market from 4 p.m. to 8 p.m.
